it's been a helluva last few weeks. i flew home from france, celebrated my mom's 60th birthday with family and friends, road tripped to orange county, flew back up to san francisco, enjoyed a few more days with my mom, road tripped AGAIN down to orange county, and have spent the last several days settling into our accommodations for the summer. whew!
i'm slowly getting back on track with my workouts and healthy eating. is two weeks post-arrival too late to feign "jetlag" as an excuse...?
the following is inspired by something i delighted in during a sunny afternoon lunch date with some best friends in the city.
kate's greenie smoothie
you'll need...
1 cup unsweetened coconut milk
1 ripe banana
2 tablespoons almond butter
1 generous handful of kale
honey/agave to taste
then you'll have to...
nothing surprising here. throw everything into the blender and whir it all around until you've reached desired consistency.
a final taste test let me know this creation could do with a bit more sweetness so i added just a tick of honey. c'est parfaite!

I recently made something not too dissimilar which included frozen tangerine slices. They added sweetness, and made it a little frosty to boot. Sure it requires more forethought to peel and freeze a tangerine, but it was worth the effort. Sounds springy!
