never one to turn down the opportunity for a culinary creation revolving around broccoli, it was no question this soup was high on my "to make" list. it's simple, satisfying, and healthy. what more could you want?
we made two minor changes to the recipe - adding half of a vegetable stock cube instead of straight up water and an extra glove of garlic. it turned out marvelously and was a perfect addition to andy's pre-game "snack."
1 tablespoon olive oil
2 cloves of garlic, chopped
1 yellow onion, roughly diced
1 head broccoli, cut into small florets
2 1/2 cups water + 1/2 cube vegetable bouillon
3/4 cup arugula
1/2 lemon, juiced and seeds removed
then you'll have to...
heat the olive oil
in a medium saucepan over medium heat. add garlic and onion and
sauté for just a minute or until fragrant. add the broccoli and cook for four
minutes (until bright green).
add the water and 1/2 bouillon cube, bring to a boil,
lower the heat and cover. cook for eight minutes or until the broccoli is just
tender.
pour the soup into a blender, add juice from 1/2 lemon and arugula. puree until quite
smooth. be very careful when blending hot liquids; start slowly and work in
batches if necessary. serve the
soup with a bit of fresh lemon.
