slow cooker irish stew

happy st. patrick's day to all my irish lads and lasses! in celebration of my irish roots and in memory of my late grandma marilyn, i decided a vegetarian twist on traditional irish stew was in order for tonight's meal.

after researching a handful of recipes, i decided to go rogue and throw together my own combination of  irish-inspired ingredients. here's hoping it tastes as good as it looks.


you'll need…
2 medium onions, chopped
3 large carrots, chopped
4 stalks of celery, chopped
8 - 10 small white potatoes
3 cups low sodium vegetable stock
1 container plain tomato sauce (mine was 500 g)
1 tablespoon tomato paste
1 tablespoon fresh rosemary, chopped
1 cup frozen peas

then you'll have to…
combine prepared ingredients in slow cooker, stir, and cover. set to "low" and cook for 6 - 9 hours. about 20 minutes before serving, add peas and cover. when peas are warmed through, serve with a hearty loaf of irish soda bread.
